Halloween Eclairs - Tulip Special Recipe

Tulip Chocolate

Halloween Eclairs are a unique, slightly spooky festive twist on the classic French choux pastry. They combine a crisp eclair shell with a rich green tea filling and a sweet-tart apple and raspberry coulis. This recipe was created specifically to celebrate Halloween because of its thematic colors: the deep green of the matcha provides a mysterious, eerie look, while the red from the fruit coulis adds a "bloody" element perfect for the spooky season.

Eclairs

  • 250 grams water
  • 200 grams whole eggs
  • 140 grams high-protein flour
  • 100 grams butter
  • 5 grams sugar
  • 3 grams salt

Instructions

  • Heat the water, milk, butter, sugar, and salt until boiling, then add the flour and cook until the mixture is dry.
  • Transfer the mixture to a mixing bowl and beat until it cools to 45°C, then gradually add the eggs bit by bit.
  • Lastly, add milk until the batter reaches the desired consistency.

Green Tea Filling

  • 160 grams milk
  • 35 grams sugar
  • 15 grams ceremonial green tea powder
  • 2 grams vanilla essence
  • 13 grams corn flour
  • 2 grams gelatine
  • 40 grams egg yolks
  • 50 grams butter
  • 60 grams white chocolate

Instructions

  • In a bowl, whisk together the egg yolks, a small portion of the milk, vanilla, green tea powder, and all the dry ingredients until well combined.
  • Heat the remaining milk until warm. Slowly pour it into the egg mixture while whisking constantly to temper the eggs.
  • Return the mixture to the pan and cook over medium heat. Stir continuously until the mixture comes to a boil and thickens, then stir in the butter and melted Tulip white chocolate when it reaches 35°C.

Apple Coulis

  • 80 grams apple puree
  • 35 grams raspberry puree
  • 15 grams sugar
  • 2 grams pectin
  • 1 gram lemon juice

Instructions

  • Heat the purees and whisk in the sugar and pectin.
  • Stir the mixture well to prevent lumps.
  • Cook until the texture thickens.
