Tulip Chocolate

A perfect blend of crunchy textures and a melting chocolate center! These Chocolate Cube Cookies are anything but ordinary. Featuring a premium chocolate filling mixed with crispy feuilletine and wrapped in a delicate, buttery sable dough, every bite offers a luxurious sensation that is truly addictive. Why not try making them yourself at home?


1. Chocolate Filling

Ingredients:

  • 120 g Tulip Chocolate Filling

  • 30 g Feuilletine

  • 10 g Cocoa Powder

  • 10 g Low-Protein Flour (Cake Flour)

Instructions:

  1. Heat the Tulip Chocolate Filling for 30–40 seconds until softened.

  2. Add the feuilletine, cocoa powder, and low-protein flour.

  3. Mix all ingredients thoroughly, then pour into a 1 cm thick frame and level the surface.

  4. Refrigerate until set.

  5. Once firm, cut into 2.5 cm squares.


2. Sable (Pastry Dough)

Ingredients:

  • 200 g Unsalted Butter

  • 90 g Icing Sugar

  • 50 g Egg (approx. 1 large egg)

  • 4 g Vanilla Extract

  • 280 g All-Purpose Flour

  • 30 g Cornstarch

  • 2 g Salt

Instructions:

  1. Cream the unsalted butter and icing sugar until well combined.

  2. Add the egg and vanilla extract, then mix well.

  3. Fold in the dry ingredients (flour, cornstarch, and salt) and mix until a dough forms.

  4. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.

  5. Roll out the dough to a thickness of 2 mm.


3. Assembly & Baking

Final Steps:

  1. Take the chilled 2.5 cm chocolate filling cubes.

  2. Place them onto the thinly rolled sable dough.

  3. Roll the sable dough to encase the chocolate, trimming neatly for a perfect fit.

  4. Brush the top with egg whites mixed with a pinch of cocoa powder.

  5. Sprinkle sesame seeds on top for garnish.

  6. Slice the log into 1.5 cm thick cookies.

  7. Bake in a preheated oven at 160°C for 8–10 minutes.


Pro Tip: Keep the sable dough chilled during the rolling process to prevent it from crumbling or becoming too soft to handle.
